Re: Stop Motion
For the Mac (Because while I have heard of windows, I do not use it!)
you can try Frame by Frame:
http://web.mac.com/philipp.brendel/Software/FrameByFrame.html
This is freeware
or Boinx iStopMotion
http://www.boinx.com/istopmotion/
A free trial demo as well as several flavors of bought version...this also allows connection of some SLRs as well as USB/Firewire webcams.
Both are simple enough for 8-9 year olds to start messing around without too much instruction.
I hope this helps.
Cheers
RJ

Re: Stop Motion
Warning: Expensive Software Below
For animation, there are many programs out there - Anasazi (free), Stop Motion Pro, iFrame, SMA, MonkeyJam (free) - the list goes on.
Sound recording and mixing: Cubase, Sony Acid, Reaper, Garage Band, Audacity (free), Pro Tools (the ultimate in sound recording and mixing, but extremely expensive) etc.
Video Editing: Adobe Premiere (highly recommend, although not free), Sony Vegas Movie Studio (also a great program, but not free), iMovie, Windows Movie Maker etc.
Most of these can be found via a quick Google search, but let me know if you can't find any.
I think the best advice I can offer though, is this: don't get any all-in-one programs (eg. Windows Movie Maker, iMove etc.). They are all crap, and you get a much better result when you use more focused programs. They also tend to produce better quality image and audio than the all-in-one.
Hope this helps.
